Entre Sueños means
The concept of Sueños is to create a lively, flavorful, and curated mariscos experience inspired by robust cultural seafood dishes that go beyond the border. After the success of creating the highly sought after “Entre Sueños Experience” limited ticketed event, Chef Stephen Sandoval launched a 6 month Baja mariscos pop-up concept at Soho House Chicago, which was extended to beyond a year. Now, Chef Sandoval and his dream team are set to open a permanent residence for Suenos in the heart of Chicago. The dishes and spirits will feature ingredients from California, Mexico, Spain, and Argentina.
A chef representing the Pacific coastline. Raised in San Diego, California - with his Mexican, New Orleans, and Spanish roots, it was common to find tamales and gumbo on the dining room table for Chef Stephen Sandoval.
As he began to explore his culinary path, he was drawn back to the robust flavors that originated across the border. A new-age style was emerging in Baja Mexico. Chef Sandoval aims to create dishes with a sense of freedom, integrating diverse cultural and personal influences that go beyond the border.
